Spinach Omelette

The diet I decided to keep is something I felt that was easily maintainable, readily available, and — most importantly — cheap! Some people look at Paleo as something expensive but if you think about it, it really is not. Most people look at that dieting as something temporary and wouldn’t mind spending an arm and a leg to get it. Maybe for the gifted few who can afford it, it is fine. But for the rest of us, it has to be economically efficient.

Thus this entry. I realized my weekly entries are starting to look the same so I decided to slowly incorporate some of the dishes I eat.

So for today, we will be making a simple spinach omelette. The ingredients are simple yet it tastes amazing. More importantly, the ingredients are available in most grocery stores. Probably what got me excited for this dish is the fact that I got myself a ring mold (like the ones they use in Burger Machine or Smokey’s when they cook egg just to ensure they don’t run around the flat top).

Ingredients:
Three (3) organic eggs (regular eggs are obviously acceptable)
One (1) small red onion
One (1) palm-full of dried chili flakes (optional)
One (1) handful of julienned spinach squeezed after soaking in water (kang kong or talbos ng camote is a good replacement)
One (1) pinch of Salt
One (1) pinch of Pepper
One (1) pinch of Turmeric (optional)
One (1) teaspoon of Coconut oil (Olive oil is optional)

Directions:
Mix all ingredients (told you it’s simple)
Pre heat your pan and pour in a teaspoon of your oil
Optional: put in your ring mold as a guide of how deep your omelette will be
Once your pan is hot, pour in the mixture and cook until brown (normally in 4-5 minutes under low heat), then flip for another 2-3 minutes.

Because of how deep the ring mold was, the inside is a bit runny. So I guess you can call it a quiche.
